I suspect he would have dissed those as well. <\/p>\n<p>But as I was determined to bake Paul Fehribach&#8217;s Jelly Roll Cake recipe  in <a href=\"http:\/\/store.bigjoneschicago.com\/product-p\/bjcb.htm\"><em>The Big Jones Cookbook<\/em><\/a> (from the pages of which I&#8217;d previously cooked <a href=\"http:\/\/www.scottedelman.com\/2015\/06\/20\/cooking-chicken-and-dumplings-circa-1920-from-the-big-jones-cookbook\/\">chicken and dumplings, circa 1920<\/a>) for the annual 4th of July bash thrown by John Pomeranz and Kathi Overton, and had never before made a jelly roll, I was forced to buy a new pan and send Thoreau spinning in his grave.<\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/BigJonesJellyRollCake.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/BigJonesJellyRollCake-300x300.jpg\" alt=\"BigJonesJellyRollCake\" width=\"300\" height=\"300\" class=\"aligncenter size-medium wp-image-20083\" srcset=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/BigJonesJellyRollCake-300x300.jpg 300w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/BigJonesJellyRollCake-150x150.jpg 150w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/BigJonesJellyRollCake-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>And so, armed with a jelly roll pan, I got started.<!--more--><\/p>\n<p>Creating the batter was easy enough (when you have the right device) &#8230;<\/p>\n<blockquote class=\"instagram-media\" data-instgrm-captioned data-instgrm-version=\"4\" style=\" background:#FFF; the resulting cake proved a wee bit overdone to &#8230; well .. <em>roll<\/em>. <\/p>\n<p>As you can see below, once spread with apricot jelly, the cake bent and kinked rather than forming perfect spirals. <\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/JellyRollCakeParty.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/JellyRollCakeParty-300x300.jpg\" alt=\"JellyRollCakeParty\" width=\"300\" height=\"300\" class=\"aligncenter size-medium wp-image-20087\" srcset=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/JellyRollCakeParty-300x300.jpg 300w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/JellyRollCakeParty-150x150.jpg 150w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/07\/JellyRollCakeParty-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Everybody thought it tasted great regardless, with  one person even suggesting I should simply call the thing &#8220;folded apricot jelly cake&#8221; so that no one would be expecting spirals, all of which I appreciated. But I still wanted to understand why it turned out that way.<\/p>\n<p>First I used a thermometer to check our oven was keeping to an accurate temperature (it was), and then consulted our other recipe books to see what they recommended for creating a cake which would still be soft enough to roll.   <\/p>\n<p><em>The Boston Cooking School Cook Book<\/em> lowers both the temperature to 350 degrees and the time to  12 minutes.<\/p>\n<p><em>A World of Baking<\/em> also lowers the temperature to  350 degrees, but keeps the time at 18-20 minutes.<\/p>\n<p><em>Chocolate Cookery<\/em> keeps the same 375-degree oven Fehribach recommended, but drops the time to 10-12 minutes.<\/p>\n<p>James Beard, in <em>American Cookery<\/em>,  <em>raises<\/em> the temperature, to 400 degrees,  but also  lowers the time to 8-9 minutes.<\/p>\n<p>And our three <em>Better Homes and Gardens<\/em> cookbooks are at war with themselves. Our 1940s edition calls for  400 degrees and 10-15 minutes, our mid-&#8217;70s edition 375 degrees for 10-12 minutes, and our 1989 edition 375 degrees  for 12-15 minutes.<\/p>\n<p>All of which means&#8212;<\/p>\n<p>Time to experiment with both times and temperatures by making a <em>lot<\/em> more jelly rolls!
