{"id":19811,"date":"2015-06-12T15:13:12","date_gmt":"2015-06-12T19:13:12","guid":{"rendered":"http:\/\/www.scottedelman.com\/?p=19811"},"modified":"2015-06-12T15:13:12","modified_gmt":"2015-06-12T19:13:12","slug":"dropping-in-on-parachute","status":"publish","type":"post","link":"https:\/\/www.scottedelman.com\/wordpress\/2015\/06\/12\/dropping-in-on-parachute\/","title":{"rendered":"Dropping in on Parachute"},"content":{"rendered":"<p>The first reservation I made for dinner during the Nebula Awards weekend way back when I started planning my trip to Chicago has a science fictional connection of which you&#8217;re probably not aware&#8212;because  Beverly Kim, co-owner of <a href=\"http:\/\/www.parachuterestaurant.com\">Parachute<\/a>  with husband Johnny Clark, is the sister-in-law of <a href=\"http:\/\/wesleychu.com\">Wesley Chu<\/a>, author of <em>The Lives of Tao<\/em>.<\/p>\n<p>So a John W. Campbell Award-nominated writer is related to a James Beard Award-nominated chef. See, the Venn diagram of food and science fiction overlaps even more than you thought!<\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/Nebulas2015ScottEdelmanFranWIlde.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-19813\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/Nebulas2015ScottEdelmanFranWIlde-300x300.jpg\" alt=\"Nebulas2015ScottEdelmanFranWIlde\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/Nebulas2015ScottEdelmanFranWIlde-300x300.jpg 300w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/Nebulas2015ScottEdelmanFranWIlde-150x150.jpg 150w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/Nebulas2015ScottEdelmanFranWIlde-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>So last Friday night, Barry Goldblatt, <a href=\"http:\/\/clockworkfoundry.com\">Kate Milford<\/a>, <a href=\"https:\/\/franwilde.wordpress.com\">Fran Wilde<\/a> and I headed over to Parachute&#8212;a Korean American restaurant named <a href=\"http:\/\/chicago.eater.com\/2014\/11\/17\/7230393\/chicago-eater-awards-2014-winners\">Restaurant of the Year<\/a> by Eater Chicago in 2014 which recently celebrated its <a href=\"http:\/\/chicago.eater.com\/2015\/5\/29\/8683485\/parachute-one-year-in-beverly-kim-johnny-clark-interview\">one-year anniversary<\/a>&#8212;to find out what all the fuss was about. That&#8217;s Fran Wilde and me (and a little bit of lens flare) above. I wish Wes could have joined us, but he had to head off to the Cayman Islands with his wife so they could celebrate their anniversary. What kind of priorities are <em>those<\/em>? <\/p>\n<p>And the meal was pretty much perfect, with but a single flaw&#8212;due to competition from that night&#8217;s mass autographing (the early part of which I skipped in order to be able to make this dinner), our party dropped from six to four at the last minute, which meant we couldn&#8217;t eat ALL the food on the menu! I guess that will have to be our goal when the Nebulas return to Chicago again in 2016.<!--more--><\/p>\n<p>We started off, as I&#8217;m told one must, with &#8230;<\/p>\n<p style=\"text-align: center;\"><strong>Baked potato bing bread, bacon, scallion, sour cream butter<\/strong><\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/ParachuteBingBread.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-19814\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/ParachuteBingBread-300x300.jpg\" alt=\"ParachuteBingBread\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/ParachuteBingBread-300x300.jpg 300w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/ParachuteBingBread-150x150.jpg 150w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/ParachuteBingBread-1024x1024.jpg 1024w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2015\/06\/ParachuteBingBread.jpg 1564w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Moist and savory, and I can see why it&#8217;s considered a signature dish.
