{"id":19236,"date":"2015-04-17T15:33:31","date_gmt":"2015-04-17T19:33:31","guid":{"rendered":"http:\/\/www.scottedelman.com\/?p=19236"},"modified":"2015-04-17T15:33:31","modified_gmt":"2015-04-17T19:33:31","slug":"tasting-the-universe-at-geranium","status":"publish","type":"post","link":"https:\/\/www.scottedelman.com\/wordpress\/2015\/04\/17\/tasting-the-universe-at-geranium\/","title":{"rendered":"Tasting the Universe at Geranium"},"content":{"rendered":"<p>I wish I could have shared about my lunch at Chef Rasmus Kofoed&#8217;s  <a href=\"http:\/\/geranium.dk\/#\/en\/restaurant\/welcome\/\">Geranium<\/a> two weeks ago, but first I had to get home from Copenhagen (since I was having too much fun while there to spare any time for blogging), then I first had to tell you about <a href=\"http:\/\/www.scottedelman.com\/2015\/04\/07\/celebrating-my-birthday-with-dinner-at-noma-the-worlds-1-restaurant\/\">my birthday dinner at Noma<\/a>, and then spend a week preparing for our annual <a href=\"http:\/\/www.scottedelman.com\/2014\/04\/14\/another-successful-thank-god-its-spring-daffodil-party\/\">Thank God It&#8217;s Spring daffodil party<\/a>. So only now do I have the spare brain to tell you about our afternoon at what&#8217;s currently <a href=\"http:\/\/www.theworlds50best.com\/list\/1-50-winners\/geranium\">#42 on the list of the World&#8217;s 50 Best Restaurants<\/a>.<\/p>\n<p>Here are a couple things you should know before I move on to what you&#8217;re really here to see&#8212;pics of food porn. (And I will, for the most part, let those pics stand for themselves. Additional words would not do them justice.)<\/p>\n<p>First,  Chef Kofoed is a three-time winner of the Bocuse d\u2019Or cooking competition, having walked away with the bronze, silver, and gold. Which had us impressed before we ever took a bite of his creations. (The closest I&#8217;d ever gotten to that famed event  previously was when <a href=\"http:\/\/www.scottedelman.com\/2013\/11\/19\/another-amazing-meal-at-next-celebrating-the-bocuse-dor-competition\/\">Next restaurant offered its Bocuse d\u2019Or-themed menu<\/a>.)<\/p>\n<p>Second, the restaurant is in an unusual location. Rather than being in the center of Copenhagen, it&#8217;s on the eighth floor of Denmark\u2019s national soccer stadium. Not at all a place where I&#8217;d have expected this level of cooking. But, oh&#8212;the view! And so &#8230;<!--more--><\/p>\n<p>Because we ordered the full Universe Tasting Menu, we began with eight appetizers. They&#8217;re the culinary equivalent of Olympic medals, so hotly contested that the U.S. placed last year <a href=\"http:\/\/www.eater.com\/2015\/1\/28\/7928671\/u-s-takes-home-silver-medal-in-bocuse-dor-2015\">for the first time ever<\/a>. So it was an amazing feat for Chef Kofoed to have won not one, but three. And amazing, too, to be dining while watching a bustling kitchen through them.<\/p>\n<p>After chatting with the chefs for awhile, we were escorted back to our table for the last of our eight appetizers&#8212; <\/p>\n<p style=\"text-align: center;\"><strong>&#8220;Seaweed &amp; Razor Clam&#8221;<\/strong><\/p>\n<p>Why did they decide to put quote marks around the name of this dish? Because those aren&#8217;t the shells of razor clams you&#8217;re seeing. They fabricated, edible, and if I&#8217;m remembering correctly, decorated with squid ink.
