But since bandwidth here is such that tossing those gigabytes up on YouTube will prevent me from doing a single other thing online for 24-48 hours, that probably won&#8217;t happen until the weekend is out. Meanwhile, you&#8217;ll have to be satisfied with a Capclave highlight that was Capclave without really being part of Capclave&#8212;<\/p>\n<p>Pig face!<\/p>\n<p>A couple of weeks back, <a href=\"http:\/\/www.voltrange.com\">Range<\/a>&#8212;which I&#8217;ve been raving about here <a href=\"http:\/\/www.scottedelman.com\/2012\/12\/16\/our-pre-opening-preview-night-dinner-at-bryan-voltaggios-range\/\">for quite awhile<\/a>&#8212;added pig face to its  menu. Only on Fridays and Saturdays, and only a few per night. Which meant, of course, I <em>had<\/em> to get there. Luckily, Capclave was coming.<\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2008\/10\/PigFaceEaters.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2008\/10\/PigFaceEaters-300x225.jpg\" alt=\"PigFaceEaters\" width=\"300\" height=\"225\" class=\"aligncenter size-medium wp-image-16160\" srcset=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2008\/10\/PigFaceEaters-300x225.jpg 300w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2008\/10\/PigFaceEaters-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Some of my friends were too queasy to look at a meal that looked back, but two who were as eager to dig into a pig face as I was were Mike and Beth Zipser, who you can see above, with the 18-hour sous vide pig face lovingly prepared by Chefs <a href=\"https:\/\/twitter.com\/MattieMcGhee\">Mattie McGhee<\/a> and <a href=\"https:\/\/twitter.com\/RomeoZangari\">Romeo Tivoli<\/a> on a small platform between us. <\/p>\n<p>We loved it, and quickly stripped it clean, as you can see from the before and after pics below. (For those who are into that sort of thing.)<!--more--><\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2014\/10\/RangePigFace.gif\"><img loading=\"lazy\" decoding=\"async\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2014\/10\/RangePigFace.gif\" alt=\"RangePigFace\" width=\"450\" height=\"450\" class=\"aligncenter size-full wp-image-16156\" \/><\/a><\/p>\n<p>The crispy skin had me feeling as if I was eating pork potato chips, and the meat couldn&#8217;t have been more tender.
