{"id":11185,"date":"2013-09-30T23:02:07","date_gmt":"2013-10-01T03:02:07","guid":{"rendered":"http:\/\/www.scottedelman.com\/?p=11185"},"modified":"2013-09-30T23:02:07","modified_gmt":"2013-10-01T03:02:07","slug":"dining-with-a-top-chef-master","status":"publish","type":"post","link":"https:\/\/www.scottedelman.com\/wordpress\/2013\/09\/30\/dining-with-a-top-chef-master\/","title":{"rendered":"Dining with a Top Chef Master"},"content":{"rendered":"<p>I&#8217;ve been to (and loved) all of Chef Bryan Voltaggio&#8217;s restaurants\u2014<a href=\"http:\/\/www.scottedelman.com\/2012\/06\/27\/our-7-course-38th-anniversary-meal-at-volt\/\">Volt<\/a> for high-end cuisine, <a href=\"http:\/\/www.scottedelman.com\/2012\/07\/21\/family-meal\/\">Family Meal<\/a> for quality comfort food, <a href=\"http:\/\/www.scottedelman.com\/2012\/09\/29\/i-visit-lunchbox-and-complete-the-bryan-voltaggio-trifecta\/\">Lunchbox<\/a> for sandwiches, and his newest restaurant, <a href=\"http:\/\/www.scottedelman.com\/2012\/12\/16\/our-pre-opening-preview-night-dinner-at-bryan-voltaggios-range\/\">Range<\/a>, for, well, everything\u2014so I enjoyed watching him compete in the latest season of <a href=\"http:\/\/www.bravotv.com\/top-chef-masters\">Top Chef Masters<\/a>. And was proud that a local chef (well, somewhat local) had survived all the way to the finale.<\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltMenu.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11186\" alt=\"VoltMenu\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltMenu-300x300.jpg\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltMenu-300x300.jpg 300w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltMenu-150x150.jpg 150w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltMenu-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Which meant that when I found out that there was going to be a viewing party of that final episode at 10:00 p.m. last Wednesday out on the Volt patio, I knew Irene and I would have to be there. And since we were going to be traveling all the way over to Frederick, why, dinner was a must! So I made an 8:00 p.m. reservation in order to  have plenty of time for a  meal before the screening.<!--more--><\/p>\n<p>We&#8217;d done Volt&#8217;s tasting menu before, and so decided to go a la carte this time around, but  as you&#8217;ll see, there were still a few surprises. The meal began with a beet macaroon with foie gras amuse-bouche. It was a dish that (deservedly) wowed the judges on <em>Top Chef Masters<\/em>, bringing one of them near tears, and I could see why. Pure umami, and Worth a trip to Volt all by itself.<\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltCalamari.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11189\" alt=\"VoltCalamari\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltCalamari-300x300.jpg\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltCalamari-300x300.jpg 300w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltCalamari-150x150.jpg 150w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltCalamari-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Next up, Black Sea bass, caramelized celeriac, fermented turnip, basil, country ham. If not for the calamari, this would rank as my top dish of the night. Delicate meat, complex flavors.<\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPork.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11192\" alt=\"VoltPork\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPork-300x300.jpg\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPork-300x300.jpg 300w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPork-150x150.jpg 150w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPork-1024x1024.jpg 1024w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPork.jpg 1839w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Then, a major surprise&#8212;our server came along with two plates of beef coulotte, sugar snap peas, carrots, vadouvan, coconut yogurt and told us that they were compliments of Chef Voltaggio, who&#8217;d heard we were at Volt and wanted to make sure we got enough to eat. A gracious and totally unexpected gesture. A much appreciated and totally unnecessary gift. That&#8217;s the crowd noticing that sous chef Graeme Ritchie, who&#8217;d competed with his boss on the show, had just joined us.<\/p>\n<p><iframe loading=\"lazy\" src=\"https:\/\/vine.co\/v\/hrYrJLrvTvA\/embed\/simple\" height=\"480\" width=\"480\" frameborder=\"0\"><\/iframe><script charset=\"utf-8\" type=\"text\/javascript\" src=\"\/\/platform.vine.co\/static\/scripts\/embed.js\" async=\"\"><\/script><\/p>\n<p>And here&#8217;s <a href=\"http:\/\/www.bryanvoltaggio.com\/#hilda\">Volt co-owner Hilda Staples<\/a> and Chef de Cuisine Ritchie watching the finale. Unlike the rest of us, they already knew the results, but managed to keep it hidden as we cheered every time there seemed to be a good turn of fortune on the screen for our team.<\/p>\n<p><a href=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPatio.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-medium wp-image-11198\" alt=\"VoltPatio\" src=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPatio-300x300.jpg\" width=\"300\" height=\"300\" srcset=\"https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPatio-300x300.jpg 300w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPatio-150x150.jpg 150w, https:\/\/www.scottedelman.com\/wordpress\/wp-content\/uploads\/2013\/09\/VoltPatio-1024x1024.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Sadly, Voltaggio didn&#8217;t win&#8212;that honor went to Douglas Keane&#8212;but after the meal Irene and I had  just shared, we didn&#8217;t feel that Team Volt had lost.
