Our opening night dinner at Voltaggio Brothers Steakhouse

There are very few things which would cause me to drive two hours to a casino on its opening day—but one of those very few things was in play yesterday, because I’d managed to reserve a table for the opening service of Voltaggio Brothers Steakhouse, the first collaboration between Bryan Voltaggio, whose hospitality I’ve experienced many times before at Volt, Range, and Family Meal, and his brother Michael, who’s made his name on the West Coast, and is therefore an unknown entity to my palate.

As you know, I love being present as a restaurant begins—I was also at the opening nights of both Range and Pineapples and Pearls—but as it turned out, there were issues surrounding this particular opening we hadn’t anticipated.

Voltaggio Brothers Steakhouse isn’t a standalone restaurant, but rather one within the MGM Grand National Harbor casino, which proved so crowded once its doors opened that within an hour, it had reached capacity, and the venue began advising folks via its Twitter feed that perhaps they should consider coming by some other time. A taste of 2Nixons during Capclave

You know how I say that one of the best parts of any convention is leaving that convention for a meal with friends? (A belief, by the way, which eventually caused me to create my podcast Eating the Fantastic.) Well, the meal I had last Friday night during an escape from Capclave with Natalie Luhrs and Aaron and Angela Pound proved my point.

A couple of days before Capclave, I learned that Range—which I’d visited many times before, one of those times being for a meal on a break from last year’s Capclave—would be holding a two-day pop-up by Charleston’s Jeffrey Stoneberger, chef and owner of 2Nixons, which has earned itself quite a rep for its take on Asian street food. And the first of those two days happened to be the first day of the con. So you know I had to be there.

Stoneberger had previously staged at The Fat Duck and Noma, so you wouldn’t expect him to be the sort of chef to turn his hand to ramen and yakitori. But that’s what he’s done. And the food he put before us last Friday proved worthy of that lofty resume.

What I baked for the Writers Group from Hell 2015 holiday party

I’ll be heading over to the Writers Group from Hell holiday party later this afternoon, to which even former members like me are invited, and since it’s a potluck, that meant I spent the last two days baking.

After flipping through my cookbooks in search of something new—wouldn’t want to bore my friends, after all—I settled on one recipe each from Paul Fehribach’s The Big Jones Cookbook and Bryan Voltaggio’s Home.

I’d already made two previous Fehribach dishes—Chicken with Dumplings and a Jelly Roll Cake—and one from Voltaggio—Blueberry Cake with Peanut Streusel. This time I decided to attempt Cheese Straws by the former and Lemon Cookies by the latter.

On Friday, I started with the Cheese Straws, because Fehribach indicated they’d improve with age, so serving them 48 hours later would be no problem.

I began with 10 ounces of sharp cheddar cheese and two ounces of blue cheese along with 1-3/4 cups of flour, so these cheese straws were sure to be … cheesy!

Celebrating Volt’s 7th anniversary with a Maryland Style Backyard BBQ

Irene and I first visited Volt, the restaurant that began Bryan Voltaggio’s culinary empire, to celebrate the 38th anniversary of the day we met, and since then have returned many times, including to check out the tasting menu at Table 21. But that’s not the only Voltaggio restaurant we’ve experienced. I’ve been to Lunchbox, and we were both present at or near the beginning of both Family Meal and Range.

So when I got an email recently announcing that there was going to be a “Maryland Style Backyard BBQ” to celebrate Volt’s 7th anniversary. I immediately knew—I was in.

Going Home with Bryan Voltaggio

Last month, I picked up a copy of Bryan Voltaggio’s new cookbook, Home, while he was making an appearance at a Barnes & Noble in Frederick. I’ve been to all of his restaurants often, and was looking forward to preparing some of my favorites at, well, home.

I assumed the first recipe I’d attempt would be his Chicken Pot Pie Fritters, but when a friend invited us to her 60th birthday party, I realized I’d have to start with something else, because fritters don’t travel. So I decided to whip up the Blueberry Cake with Peanut Streusel, which according to the cookbook photo is to supposed to turn out looking like this. (more…)

We finally make it to Volt’s Table 21

We’ve eaten at Bryan Voltaggio’s Frederick restaurant Volt multiple times, both in the Main Dining Room and the Chef’s Dining Room. But somehow, we’ve never been able to snag reservations at Table 21, the 8-seat counter which wraps around the open kitchen, where you’re served a tasting menu comprised of (what else?) twenty-one courses. Reservations become available at 9:00 a.m. exactly one month in advance , and I guess I just never jumped quickly enough for the days I was seeking.

But last week, serendipity worked in my favor. Old friends who’d long been drooling over my various Volt reports were visiting from out of town, and I’d gotten reservations for us in the Chef’s Dining Room. But the day before, I received a cell from Volt asking whether we might like to move to Table 21, as there were suddenly four available seats.

Who could say no to that?

And so last Thursday, the four of us headed over to Maryland to join four strangers (who due to the intimate nature of the seating would soon become friends) around the kitchen as Chef de Cuisine Scott Muns (recently of Rose’s Luxury) led his team to serve up a delicious and inventive meal.

Devouring the pig face special at Range

I had a great time last weekend during my three days at Capclave, and I plan to tell you all about it after I upload the videos of the panels and two readings I recorded. But since bandwidth here is such that tossing those gigabytes up on YouTube will prevent me from doing a single other thing online for 24-48 hours, that probably won’t happen until the weekend is out. Meanwhile, you’ll have to be satisfied with a Capclave highlight that was Capclave without really being part of Capclave—

Pig face!

A couple of weeks back, Range—which I’ve been raving about here for quite awhile—added pig face to its menu. Only on Fridays and Saturdays, and only a few per night. Which meant, of course, I had to get there. Luckily, Capclave was coming.

Some of my friends were too queasy to look at a meal that looked back, but two who were as eager to dig into a pig face as I was were Mike and Beth Zipser, who you can see above, with the 18-hour sous vide pig face lovingly prepared by Chefs Mattie McGhee and Romeo Tivoli on a small platform between us.

We loved it, and quickly stripped it clean, as you can see from the before and after pics below. (For those who are into that sort of thing.) (more…)

My all-Bryan Voltaggio Saturday

I was supposed to have dinner at Bryan Voltaggio’s newest restaurant, Aggio, back when it opened, but an ice storm forced me to cancel. That an ice storm was the cause will show how early in the year this was. I wanted to try again, but life was far too busy for me to make it happen, until Saturday, when I finally had that dinner … and also the crazy idea of making it at all-Voltaggio day at the same time.

Another amazing meal at Family Meal

Sunday night’s surprise snowfall forced me to cancel our dinner reservations at the recently opened Aggio, which caused me to undergo a bit of Bryan Voltaggio withdrawal. Luckily, I had various errands to run over in Maryland Tuesday, which gave me a perfectly good reason to drop by one of the chef’s other restaurants, Family Meal. I’ve been enjoying that spot ever since it opened back in 2012.

I started, of course, with my favorite appetizer, the chicken pot pie fritters.

When I placed my order, the server indicated that the recipe had been tweaked to include crushed Ritz crackers in the crust. Surprisingly, this improved a concept I already enjoyed. The coating held together the pot pie filling more tightly, and made for an even more interesting contrast between the shell and what was inside. (more…)

Bryan Voltaggio reinvents the Smith Island Cake

Ever since Family Meal unveiled its Smith Island Roll on Twitter and Facebook New Year’s Eve eve, I’ve been wanting to drop in and try it. I even considered stopping by as we headed to Range, another Bryan Voltaggio restaurant, to celebrate New Year’s Eve, but that seemed a bit much, even for me.

Last night, though, on the way back from a dinner with Jay Lake, Jay’s Dad, Lisa Costello, and Peggy Rae and John Sapienza at which the company was superb but the food was merely adequate, I thought—now’s my chance.

Why the sense of urgency around a Smith Island Roll, Voltaggio’s tweaking of the official dessert of the state of Maryland, the Smith Island Cake?

During our second visit to Family Meal in August of 2012, just a month or so after the restaurant opened, I ordered a slice of Smith Island Cake, and it was a wonder. But then … it was gone, no longer on the menu during any of our subsequent visits to Family Meal. (more…)
