I have never consider marrow to be offal at all. In fact, in simpler days, it was a mainstay of any diet since it had the most fat and calories needed for the primitive diet. I still on occasion crack chicken bones for the rich marrow and have been known to do the same for roast bones when I’m not using them to flavor the stock.
