One of the best Chinese food meals I ever had was at an Hakka restaurant in Seattle (since closed). The Hakka are the Chinese equivalent of the Romany people of Europe and their cuisine is a fusion of the four major Chinese cuisines. My wife works with a woman who owns a Hakka restaurant and they’ve added Indian cuisine (since her family lived in India before moving first to Canada and then to the US). So I’d definitely suggest Hakka as a cuisine to try if you haven’t had the chance yet. (link should connect to Wiki article on Hakka cuisine.)
